Ingredients needed:

  1. 1/2 cup Asian sweet chili sauce
  2. 2 tbsp fresh line juice
  3. 2 tbsp less-sodium soy sauce
  4. 1 tbsp canola oil
  5. 4 6oz perch fillets
  6. lime wedges to suit

There’s never a better time of year to grab a bottle of suds, break out the barbecue and experiment with some new recipes. My family and I regularly pick up recipes where ever we go, in the grocery isle, from magazines, at a local eatery, off the internet, you name it, if it looks good we’ll try it. Some of the recipes we find are a great success, and some of the recipes are so disastrous (usually our own fault) that we end up tossing the entire meal and ordering pizza instead. We found this perfect summertime recipe in the fish isle at our local grocery store.

This recipe for 4 person recipe for Chile-Lime Grilled Perch is courtesy is as follows,

  1. Coat the grill with non stick cooking spray.
  2. Preheat grill to medium (300F to 350F).
  3. For the marinade, in a small bowl whisk together chili sauce, lime juice, soy sauce, oil and pepper to taste. Place fillets in a large shallow dish. Spoon marinade over fillets, turning to coat. Let stand 10 minutes.
  4. Remove perch from marinade and reserve the rest. Grill 4-6 minutes per side or until fish flakes easily with a fork, brushing occasionally with reserved marinade. Transfer to a platter and serve with lime wedges.
